Simple Vegan Tomato Soup

Another day, another soup. I honestly don’t know what could beat a warm creamy tomato soup with a crispy grilled cheese sandwich. This simple vegan tomato soup is so simple but not lacking in flavor.

Ingredients

  • 3 tablespoons vegan butter
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 28 oz. can whole peeled tomatoes
  • 1 15 oz. can fire-roasted diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup vegan cream (I used the soy Silk original creamer), optional
  • salt & pepper, to taste
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Instructions

Add the vegan butter to a large soup pot over medium high heat. Allow the butter to melt, then add the diced onion.

To the butter and onion, add red pepper flakes, dried basil, dried oregano, salt and pepper. Stir to combine.

Sauté until the onions are lightly browned, about 7-8 minutes.

Add minced garlic and stir. Sauté for about another minute or so.

Add the can of whole peeled tomatoes (including the juice) and the can of fire-roasted diced tomatoes (including the juice).

Add 2 cups of vegetable broth and give everything a stir.

Bring the soup to a boil then once boiling reduce the heat and allow it to simmer on low for 10-15 minutes. Within the last minutes of simmering, add in the vegan cream and stir.

Remove pot from heat and allow it to cool for a few minutes before adding to a blender (or you can use an immersion blender). I personally just used a blender.

Blender until creamy and smooth.

Serve while warm with some cheesy and toasty vegan grilled cheese and enjoy!
