Tortellinis are a childhood classic for my family, so I decided to add a twist and create this Mediterranean tortellini pasta salad. Packed with fresh veggies, a flavorful dressing, and topped off with some vegan feta, this pasta is simple and easy to make. The vegan tortellini I used is from Kitehill and it tastes like the tortellinis I had as a child which brings back so many amazing memories.
Mediterranean Tortellini Pasta Salad
Ingredients
- 1 package vegan tortellini (I used the Kitehill dairy-free ricotta one)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, quartered
- 1 cup marinated artichoke hearts, roughly chopped (I used the ones from Trader Joe’s that come in a jar)
- 1/4 cup black or kalamata olives, sliced
- 1 red bell pepper, chopped
- 1/2 cup vegan feta cheese (I like the Follow your Heart brand or the Trader Joe’s one)
- MEDITERRANEAN DRESSING
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 tablespoon agave
- 1 teaspoon dijon mustard
- 1 teaspoon lemon juice
- salt & pepper
Instructions
Cook the tortellini according to package instructions and allow too cool completely.
Combine dressing ingredients in a jar, cover with the lid and shake until fully mixed.
In a large bowl, combine the tortellini, tomatoes, cucumber, artichoke hearts, red bell pepper, olives, and feta cheese. Stir to combine all the ingredients. Pour as much as the dressing you desire and give the salad in more good stir.
Serve right away or cover and place in the fridge to enjoy later! Enjoy!
