In my opinion, there is nothing better than waking up on the weekend and smelling a fresh batch of pancakes being made. These fluffy vegan pancakes are so delicious and easy to make. You can top these pancakes with whatever toppings you prefer but I love to top mine with a little dollop of vegan butter, some fresh berries, and maple syrup.
Fluffy Vegan Pancakes
Ingredients
- 2 cups flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground flaxseed
- 2 cups soy milk (any milk you like)
- 3 tablespoons vegan butter, melted
- 1/2 lemon juiced
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
Whisk together the flour, sugar, baking powder, baking soda, ground flaxseed, and a pinch of salt.
Create a hole/well the center of the dry ingredients and add the soy milk, melted vegan butter, lemon juice, and vanilla extract.
Mix until all the ingredients are incorporated but try not to overmix the mixture.
Add a little vegan butter to skillet or pan over medium high heat. Allow the butter to heat up before adding in about 1/4 cup of the batter.
Cook for about 3-4 minutes on one side, then flip and cook for an addition 3 minutes on the other side until the pancakes are golden.
Continue this process with the remaining batter. This must batter makes about 8 small/medium pancakes.
Top with a little vegan butter, fresh fruit, and maple syrup. Enjoy!
