Ingredients

  • 1 cup cashews, chopped
  • 1 cup oats
  • 1/2 cup almonds, chopped
  • 1/2 cup candied pecans, chopped
  • 1/4 cup sunflower seeds
  • 2 tablespoons ground flaxseed
  • 1 teaspoon ground cinnamon
  • 1 ripe banana
  • 1/4 cup coconut oil
  • 2 tablespoons maple syrup
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut chips

Preheat oven to 350.

In a bowl combine cashews, oats, almonds, candied pecans, sunflower seeds, ground flaxseed, and cinnamon. Stir to combine.

In a separate bowl, add the ripe banana and mash.

To the mashed banana, add coconut oil, maple syrup, brown sugar, and vanilla extract. Mix until all the ingredients are combined.

Add the wet ingredients to the dry and mix until combined.

Spread the granola in a single even layer on a parchment lined baking sheet.

Bake for 25-30 minutes, stirring half way. Bake until golden and crisp.

2 to 3 minutes before the granola is ready, remove from the oven and sprinkle the coconut chips on top and return to over, they should be lightly toasted.

Serve with your favorite yogurt, chia seeds, maple syrup and freshly sliced banana. Enjoy!
