I love a good BBQ salad and this BBQ chickpea salad fulfills that craving to a tee. This salad literally comes together in minutes. Adding BBQ corn chips adds the perfect crunch and the chickpeas are a good source of plant-based protein. Chickpeas don’t have a strong flavor so adding BBQ sauce to them makes them taste perfect.
BBQ Chickpea Salad
Ingredients
- 1/4 cup crispy chickpea
- 1 tablespoon bbq sauce
- Romaine lettuce
- Cherry tomatoes
- Cucumber
- Avocado
- Roasted corn
- Bbq corn chips
- Red bell pepper
- Green bell pepper
- Bbq sauce
- Ranch dressing
Instructions
In a bowl, combine crispy chickpeas and bbq sauce. Mix until all of the chickpeas are fully coated.
Wash and cut all of your salad toppings.
When ready, assemble your salad. Start with a bed of romaine lettuce, topping with green and red bell peppers, roasted corn, cherry tomatoes, cucumber, avocado, and bbq corn chips.
Add the bbq chickpeas and finish the salad off with a drizzle of bbq sauce and ranch dressing. Enjoy!
