BBQ Ranch Salad

This is my go to lunch when I need to make something quick and delicious. You can whip this BBQ ranch salad up within minutes and your taste buds will thank you later. You can make this salad as personal as you want by adding all the desired vegetables you would like. You could all add a different protein source. I absolutely love this quick, healthy, and amazing salad and I have a really good feeling you will too.

Ingredients

  • Tempeh bacon, I used the lightlife one
  • Romaine lettuce
  • Cherry tomatoes, halved
  • Cucumber, quartered
  • Corn
  • BBQ RANCH DRESSING
  • 3 tablespoons ranch dressing
  • 1 tablespoon BBQ sauce

Instructions

In a pan over medium heat add 2-3 strips of tempeh bacon and cook according to package instructions.

While the tempeh is cooking, wash and cut the romaine lettuce, cherry tomatoes, cucumber, and corn.

Combine the ranch dressing and BBQ sauce to make the BBQ ranch.

When the tempeh is done cooking, assemble the salad by starting with a bed of romaine lettuce and top with all the veggies and tempeh bacon. Finish the salad off with a drizzle of the BBQ ranch dressing and enjoy.
