One of my favorite recipes to have on hand is chia seed pudding. It tastes amazing and it comes together within a few minutes. Also, it is packed with so many health benefits because chia seeds are loaded with omega-3 fatty acids, fiber, and antioxidants. Some additional health benefits include better heart health, reduced inflammation, and it may reduce blood sugar levels. I love to prepare this simple and delicious chia seed pudding and have it for breakfast throughout the week.
Chia Seed Pudding
Ingredients
- 2 cups soy milk (any kind of desired milk)
- 1/2 cup chia seeds
- 1 teaspoon vanilla extract
- 3 tablespoons agave
- Fresh fruit, for toppings
Instructions
In a glass jar combine milk, chia seeds, vanilla extract, and agave.
Give it a good stir and let it set for 15 minutes. After 15 minutes, stir the chia pudding one more time to avoid it from clumping.
Cover and refrigerate overnight or at least 3-4 hours.
The next morning or after the chia pudding is set, top with desired toppings and enjoy! I personally love topping mine with fresh fruit and a little granola to add a nice crunch.
