Oatmeal has always been a staple in my breakfast arsenal but this creamy coconut oatmeal takes your normal oatmeal to the next level. The coconut milk adds a beautiful creamy texture. I like to top my oatmeal with fresh berries and bananas but you can top it with any of your favorite toppings. My Auntie Ann first introduced me to this oatmeal and now I make it on a weekly basis. Oatmeal is packed with many nutrients and it’s the perfect way to start your day! Easy, quick and you only need 3 ingredients! It doesn’t get much better than that.
Creamy Coconut Oatmeal
Ingredients
- 1 cup rolled oats
- 2 cup coconut milk
- 2 tablespoons brown sugar
- TOPPINGS
- strawberries
- blackberries
- bananas
- shredded coconut
Instructions
In a pot, add the rolled oats and coconut milk, stir and bring to a light simmer.
Once simmering, add 2 tablespoons of brown sugar or desired sweetener. Stir to combine. Cook for an additional 2-3 minutes or until creamy.
Serve and top with fresh fruit and shredded coconut. Enjoy!
