Lemon blueberry protein muffins are a delicious and easy breakfast or snack idea that are packed with protein. These are a great option for after a workout or if you want a sweet treat and they are stored very easily.
Lemon Blueberry Protein Muffins
Ingredients
- 1 1/2 cup all-purpose flour
- 1/3 cup Gainful protein powder
- 1 Madagascar vanilla flavor pack, from Gainful
- 1 tablespoon baking powder
- 2 teaspoons lemon zest
- 1/4 cup apple sauce
- 1/3 cup maple syrup
- 1/3 cup coconut oil, melted
- 1/2 lemon, juiced
- 1 1/4 cup plant-based milk
- 1 cup fresh or frozen blueberries
Instructions
Preheat oven to 350 degrees F.
Line a muffin pan with muffin liners or lightly grease the pan.
In a bowl, combine flour, protein powder, vanilla flavor package, baking powder, and lemon zest. Mix until all ingredients are combined.
In a different bowl, combine wet ingredients, the apple sauce, maple syrup, melted coconut oil, lemon juice, and milk.
Add the wet ingredients into the bowl with the dry ingredients. Mix to combine. Once batter is smooth, lightly fold in the blueberries.
Fill muffin pan with blueberries batter.
Bake for 25-30 minutes.
Cool for 10 minutes and enjoy!
