Lemon Dijon Pasta Salad

A nice chilled pasta salad on a hot summer day is a perfect combination. This lemon dijon pasta salad is delicious and packed with nutritional benefits and flavor. The lemon adds a fresh citrus element and the dijon mustard creates a beautiful tangy taste to elevate the flavors of the salad.

Ingredients

  • 3 cups pasta, dry
  • 1 bundle of broccolini
  • 1 bundle of asparagus
  • Vegan butter
  • Garlic powder
  • Salt & pepper
  • 1 cup sun-dried tomatoes
  • 1 cup frozen peas
  • LEMON DIJON SAUCE
  • 3/4 cup mayo
  • juice from 1 lemon
  • 2 tablespoons dijon mustard
  • 1/2 tablespoon honey
  • 2 garlic cloves minced
  • pinch of paprika
  • salt & pepper, to taste

Instructions

Cook pasta according to package instructions. During the last few minutes of the cook time, add the frozen peas. When done cooking, drain pasta and peas and a little vegan butter. Place in fridge to chill for a little.

While the pasta is cooking, wash and cut the asparagus and broccolini.

In a pan with a little vegan butter or oil, add the asparagus and broccolini. Season with salt and garlic powder. Sauté for 5-7 minutes until tender.

In a bowl, add all of the sauce ingredients and mix until well combined.

After the pasta is chilled, add the broccolini, asparagus, sun-dried tomatoes and pour the sauce over the pasta. Mix until well coated. Place in fridge to chill for a little longer and serve when ready. Enjoy!
