Lemon Olive Oil Cake

If you were to ask me what the perfect summer cake is, my immediate answer would be lemon olive oil cake. Olive oil cake is so light and moist. Olive oil replaces butter which helps make the cake rich and flavorful. If you are going to a summer party and need to bring a dessert, this olive oil cake with fresh lemon is an amazing option. It is easy to cook and you probably have most of the ingredients already in your pantry.

Ingredients

  • 1 cup olive oil
  • 3 large eggs
  • 1 1/2 cup sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup lemon juice
  • Zest from 1 lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking powder
  • 2 cups all purpose flour
  • Powdered sugar for topping

Instructions

Preheat oven to 350 degrees.

In a bowl, whisk the olive oil, eggs, and sugar together.

Add the vanilla extract, lemon juice, lemon zest and milk and lightly whisk to combine.

In another bowl, add salt, baking powder, baking soda, and flour. Mix until well combined.

Add the dry ingredients into the wet ingredients. Mix together but try not to over mix the batter.

Add the batter to the well greased pan.

Bake for 50-55 minutes. The cake will rise and start too lightly brown on the top.

Remove from oven and cool for 10-15 minutes in the pan. Gently remove from the pan and then place the cake on a cooling rack allowing it to cool completely.

Once the cake is fully cooled, dust with desired amount of powdered sugar and enjoy!
