One of my favorite meals my mom makes is her mashed potatoes. I love her mashed potatoes so much I used her traditional recipe and made it vegan so everyone, especially me can enjoy these amazing and simple potatoes. I remember when I was younger, my sister and I would help our mom peel potatoes to help make the mash even faster. I took her traditional recipe and made it vegan so everyone can enjoy this amazing and simple meal. This just goes to show that family classics can be made vegan while still tasting delicious.
Mama's Mash Made Vegan
Ingredients
- 3 russet potatoes, washed and peeled
- 5 tablespoons vegan butter, my favorite is the original from Earth Balance
- 1/2 cup plant-based milk, I used unsweetened soy milk
- 3 cloves garlic, minced
- salt & pepper, to taste
Instructions
Wash, peel, and cut the potatoes into 1-inch cubes. If you prefer to leave the skins on go ahead and leave them on. Add the cubed potatoes to a pot and fill with water so the potatoes are fully submerged.
Add the garlic to the pot and bring to a boil.
Once boiling, reduce the heat to low and simmer for 15-20 minutes or until the potatoes are fork tender.
Drain the potatoes and add the potatoes to a blender. To the blender add the vegan butter, plant-based milk, and salt & pepper. Blender until smooth and creamy. Add more milk to get your desired consistency.
Top with a little more vegan butter, paprika, and green onions. Enjoy!
