Salted Caramel Granola

I love making homemade granola and this salted caramel granola has to be one of my favorites. The combination of salt and caramel is one that can not be beaten. It is the perfect balance between salty and sweet. This granola is perfect for a yogurt bowl or parfait. It is also great on its own with some milk to make it a cereal granola.

Ingredients

  • 3 cups oats
  • 3 tablespoons chia seeds
  • 1 cup cashews
  • 1/2 cup almonds
  • 1/3 cup candied pecans
  • 1/3 cup maple syrup
  • 1/2 cup caramel sauce
  • 3 tablespoons coconut oil, melted
  • 1/2 teaspoon cinnamon
  • 1 teaspoons vanilla extract
  • pinch of salt

Instructions

Preheat oven to 325 degrees.

In a bowl combine oats, chia seeds, hemp hearts, cashews, almonds, cinnamon, and salt.

In a different small bowl combine maple syrup, caramel sauce, coconut oil, and vanilla extract.

Combine the wet ingredient mixture (the maple caramel sauce) with the oats and nuts mixture. Mix until everything is coated and combined.

Add granola to a parchment lined baking sheet and spread on an even layer.

Bake for 20 minutes, flip and return to oven for an additional 10 minutes.

Remove pan from oven sprinkle the candied pecans on top and let cook for about 10 minutes.
