Single Serving Apple Crisp

This single serving apple crisp is perfect for a night when you want something sweet and easy to make. I love any kind of crisp but apple crisp has to be one of my favorites. I added some vegan ice cream to the warm apples with the crispy crumble and once the ice cream starts to melt, it creates the perfect bite.

Ingredients

  • 1 medium gala apple, cubed
  • 1/2 teaspoon lemon juice
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • 3 tablespoons rolled oats
  • 1 tablespoon flour
  • 2 tablespoons candied pecans, finely chopped
  • 1 1/2 tablespoons vegan butter, softened
  • vegan vanilla ice cream or vanilla yogurt, for topping

Instructions

Preheat oven to 400 degrees F.

Peel your apple and cut into bite-sized cubes.

Add the cubed apples into a bowl with 1/2 lemon juice, 1 tablespoon brown sugar, and 1/2 teaspoon cinnamon. Mix to combine and add the brown sugar cinnamon apples into a small baking dish or ramekin.

Mix softened butter, 2 tablespoons brown sugar, 1/2 teaspoon cinnamon, candied pecans, rolled oats, and flour in a bowl. You can use your hands or a spatula to create a crumble.

Add the crumble on top of your apples and bake for 25-30 minutes or until the apples are bubbling and the crumble is golden brown. Top with a healthy serving of vegan vanilla ice cream or vegan yogurt and enjoy!
