Honestly, who doesn’t like chai? I decided to make spiced chai chia seed pudding. This recipe is perfect to make ahead of time so it’s easily ready to eat for breakfast or a snack. I used the chai concentrate from Trader Joe’s because it taste amazing and easy to make.
Spiced Chai Chia Seed Pudding
Ingredients
- 2 cups soy milk
- 1/3 chai concentrate
- 2/3 cup chia seeds
- 1/2 teaspoon vanilla extract
- 3 tablespoons agave
- TOPPING
- vegan yogurt
- sliced banana
- optional agave
- cinnamon
Instructions
In a large mason jar, combine soy milk and chai concentrate and mix to combine.
Add chia seeds, vanilla extract, and agave. Stir until the mixture is combined and allow it to sit for 10-15 minutes, then give it another stir and add the lid.
Place in the refrigerator overnight. The next morning top the chia pudding with some vegan yogurt, bananas, and cinnamon and enjoy!
