Spicy Garlic Tofu Noodle Bowl

The flavors in this spicy garlic tofu noodle bowl will change your life. One of my favorite ingredients in the meal is the sweet chili sauce, which brings the whole plate together. I get my sauce from Trader Joe’s but you can find it at any grocery store. Sweet chili sauce is sweet but spicy at the same time and we love a sweet and spicy combo!

Ingredients

  • 1 block extra firm tofu, cut into 1/2 inch cubes
  • 2 tablespoons cornstarch
  • 3 tablespoons olive oil
  • salt & pepper
  • 2 tablespoons agave
  • 1 tablespoon sriracha or gochujang chili paste
  • 2 tablespoons sweet chili sauce, I used the Trader Joe's one
  • 1 tablespoon soy sauce
  • 1/2 tablespoon rice vinegar
  • 5 cloves garlic, minced
  • 2 teaspoons red pepper flakes
  • 1/4 onion, diced
  • 2 stalks green onion, thinly sliced
  • 3 packs ramen noodles, I used the vegan one from Trader Joe's
  • 1 tablespoon vegan butter
  • 1 head broccolini
  • 1 package mushrooms, thinly sliced

Instructions

Drain the tofu of any excess liquid before cutting into small cubes.

Add the tofu to a large bowl with cornstarch, 1 tablespoon olive oil, salt and pepper. Gently toss to coat.

Heat a large pan over high heat and add a little olive oil and cook the tofu for about 10-12 minutes, or until golden and crispy. Toss half way so that both sides can get crispy. When done, transfer to a plate and set aside.

While the tofu is cooking make the sauce, mix together the agave, sriracha or gochujang, sweet chili sauce, soy sauce, and rice vinegar. Set aside.

Sauté the mushrooms and broccolini with a little vegan butter.

Cook ramen according to package (and don't add any of the seasoning that come in the package; just cook the noodles)

Return the same pan to the heat and add a little oil. Once hot, add garlic, onion, and red pepper flakes, and green onions. Sauté for 4-5 minutes.

Reduce the heat to medium and add the sauce, cook for another 4-5 minutes or until the sauce becomes sticky.

Add the tofu to the pan and give it a toss so that all the tofu is coated. Next, add the ramen noodles, broccolini, and mushrooms. Mix well so everything is combined.

Serve desired amount and add sliced green onions and red pepper flakes. Enjoy!
