Tempeh BLT

This tempeh BLT with chipotle mayo is a unique twist on the classic BLT sandwich. This is perfect to prepare the tempeh bacon ahead of time and when you want to throw together a quick sandwich, you can just assemble all of the ingredients. The chipotle mayo adds a spicy kick and you will have your delicious sandwich ready in minutes.

Ingredients

  • TEMPEH BACON
  • 1 8oz. package tempeh
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons agave
  • 1 teaspoon paprika
  • CHIPOTLE MAYO
  • 1/2 cup mayo
  • 1 1/2 teaspoon chipotle peppers adobe sauce
  • 1 teaspoon agave
  • SANDWICH TOPPINGS
  • tomatoes
  • avocado
  • lettuce
  • bread

Instructions

Slice the tempeh into bacon like stripes.

In a shallow dish, add olive oil, soy sauce, agave, and paprika.

Add the stripes of tempeh into the marinade and let sit for 10-20 minutes.

While the tempeh is marinade, prepare your sandwich toppings. Wash and cut the lettuce, tomato, and avocado.

In a pan over medium high, add a little olive oil and add tempeh. Cook for 4 minutes on one side, flip and cook for an additional 4 minutes.

While the tempeh is cooking, in a small bowl, combine mayo, chipotle sauce, and agave. Mix until all ingredients are well combined to create your chipotle mayo.

Assemble your sandwich and enjoy!
