Tempeh Taco Bowl

Ingredients

  • 1 cup rice
  • 1 lime juice
  • 1 can refried beans
  • Cherry tomatoes
  • 1 package tempeh
  • 2 tablespoons taco seasoning
  • Lettuce, shredded
  • Sour cream
  • Avocado

Instructions

In a pot, cook the rice by adding 1 cup rice to 2 cups water and 1 lime juiced. Bring to a simmer and reduce to low heat and cook for about 15-20 minutes until rice is fluffy.

To a pan over medium high heat, add a little olive oil and crumble in the package of tempeh, cook for about 4-5 minutes, until starting to brown.

Add 1/3 cup water to the pan with 2 tablespoons taco seasoning. Stir to combine. Cook for an additional 5-7 minutes.

Prepare your desired taco bowl toppings, and assemble bowl. Enjoy!
