The best kind of popcorn hands down has to be caramel corn. This vegan caramel corn brings back so many memories of soccer tournaments and getting caramel corn as a treat after our last game of the weekend. I am not a big movie person but when I have a bowl of this popcorn, I will watch whatever movie. This recipe is perfect for a movie or game night or just a snack for throughout the day.
Vegan Caramel Popcorn
Ingredients
- 1/2 cup vegan butter
- 1 cup brown sugar
- 1/4 cup agave
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 bag popcorn, about 8 cups popped
Instructions
Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
Pop the popcorn and add to a large mixing bowl.
Melt the vegan butter in a pot over medium heat. Once melted add brown sugar and agave. Stir to combine. Bring to a bowl, then reduce the heat to low and let simmer undisturbed for 4 minutes. Once those 4 minutes are over, continue to cook for an additional 5 minutes. Stirring every 30 seconds, until the mixture is a deep golden color.
Remove the pot from the heat and whisk in the salt, baking soda and vanilla extract.
Pour the caramel mixture over the popcorn and stir gently to coat all of the popcorn.
Spread the caramel popcorn onto the prepared baking sheet and bake for 15 minutes, stirring every 5 minutes, until the caramel corn has turned a deep amber color. Remove the popcorn from the oven and let cool completely.
Once completely cooled, break the popcorn up and serve or store for later. Enjoy!
