Vegan Mango Ceviche

Summer is among us and that means it’s almost time for poolside snacks. Vegan mango ceviche is a perfect snack for a warm summer day. You can serve it with chips or as a topping on your vegan tacos. The heart of palm acts as a substitute for the fresh fish or shrimp that is usually used when making ceviche. This ceviche is easy to make and the flavors will wow you.

Ingredients

  • 1 can hearts of palm
  • 1 avocado
  • 1 jalapeno
  • 1 mango
  • 1/2 lime, juiced
  • garlic powder
  • salt & pepper to taste

Instructions

Drain and cut the hearts of palm into slices, add to a medium-sized bowl.

Cut the avocado, mango, and jalapeño into bite-sized cubes and add to the bowl with the hearts of palms.

Add juice from 1/2 lime and season with garlic powder and salt & pepper.

Serve with your favorite tortilla chips (I used the Trader Joe’s Restaurant Style White Corn Tortilla Chips…They are the best!) Enjoy!
